Vegan Irish Potato Bread, is the perfect breakfast for St.Patrick`s Day and any other day too!!
Do you celebrate St. Patrick`s Day? Obviously since I am Irish and living in Ireland it has always been a big occasion here.
When my children were little we went to see parades and as they got older they took part in parades with different clubs they were involved in. The excitement of parades soon faded though as they got old enough to go out with their friends for the day though!!
There is always lots of people having the craic as they say so it`s a great day to go out!
This year my daughter will be working in her part time job in a pub which will be packed as the Irish Rugby team take on England in the Six Nations. Ireland have already won the competition but if they beat England they will have won all their matches so will win the Grand Slam too. I love rugby so I will be watching it. My son will be home but I`m sure he will be off meeting up with his friends.
Irish people are known for loving potatoes but they also love bread among other things!! At the start of March we had a huge snowstorm here which meant a red alert and everything shut down. It became a national joke how much bread people bought to stock up for the storm!
We do not get snow every year and normally the most we get is about twelves inches or so which does not last long. This time though it was severe, there was fifteen foot drifts outside my house. Around here got the worst snow since the 1940s!! It was amazing at first but after a week housebound the novelty wore off!! Snow is predicted for St. Patrick`s day but no one wants to see it again, There is still snow around from the last storm!
Vegan Irish Potato Bread is a recipe from the North of Ireland. My mother was from Armagh and I was born there though I grew up in Wexford. We always had potato bread when I was growing up.
It was usually made from left over mashed potatoes which were simply mixed with flour to make a soft dough. This was then flattened out and cut into rounds or squares. Vegan Irish Potato Bread is cooked traditionally on a skillet but you can just use a frying pan, no fat is needed to cook it.
We eat Vegan Irish Potato Bread as a breakfast bread fried with vegan sausages and tomatoes. While I do not eat fried food everyday some days like St Patrick`s Day when you might be out all day it`s good to have a hearty breakfast to keep you going. (Especially if you might be having a liquid lunch!!) I do not really drink much myself but a lot of people do indulge for the day thats in it!

Irish Potato Bread
Ingredients
- 400g/ 14oz Potatoes (peeled)
- 85g/ 3oz Plain Flour
- 56g/ 2oz Vegan butter
- salt and pepper
Instructions
- Chop the potatoes into cubes and put in a saucepan. Cover with boiling salted water. Cook until tender.
- Drain the potatoes and place the saucepan back over a low heat for a few minutes to dry them out.
- Remove from heat, add vegan butter and mash until smooth
- Add salt and pepper to taste
- Add most of the flour. The amount of flour needed will depend on how much moisture are in the potatoes. You may need to add more or less as needed.
- The dough should be firm, coming away from the sides of the pan and be able to hold it`s shape but not too dry
- Tip out onto worktop. Pat out to 1/2 cm or 1/4 inch thick. Cut into rounds with a cookie cutter or just into squares with a knife
- Warm up a frying pan and cook them on a medium heat for 3-4 minutes until each side. They should be nicely browned on both sides
